Patpat’s Kansi in Roxas City
Dec 17When was the last time I had a bowl of Kansi? Ahhh many moons ago. So when I visited Roxas City recently, I learned that there was a branch of Patpat’s Kansi there.
Kansi is one Ilonggo food that probably, I can live without. But would never complain if served one.
Probably the closest thing to Kansi that is more common in Manila is Bulalo. Both is known for the bone marrow served with the soup. Kansi uses a souring agent that is very common in the Visayas region especially in the islands of Negros and Panay: Batwan.
While bulalo is cooked and served with vegetables like pechay or cabbage, kansi is served as-it-os. no veggies, just the bone marrow/meat and the soup. Most kansi is served with yellow-colored soup. This is due to the atchuete used as coloring agent.
Patpat’s Kansi is wickedly delicious. For 115 Pesos, One can already have a a cup of rice and steaming hot bowl of kansi with a large bone with some meat and truckloads of bone marrow. Once served, you should consume it immediately, or else, all the sebo in the world will either stich in your tongue or worse, in your mouth. Ang hirap tanggalin ng sebo!.
For the health conscious, one can opt to get an all-meat type of kansi and price is much cheaper too.
Apologies for not updating this blog regularly. I have been to preoccupied with my other projects.
