Batangas is a province known for its cattle-raising industry. And when we talk about gastronomic delights, there could be no other food that could best represent Batangas than Bulalo. Bulalo is a hot beef stew made of slowly cooked beef shanks with its bone marrow intact, seasoned with salt and pepper.

Though, the Bulalo recipe is popular in Batangas, the soup has also come in different variations depending on which city or place you eat, but the very basic and most important ingredient in Bulalo is the bone marrow. Most versions have some vegetables added like cabbage, pechay leaves, and string beans, onions. Some also add corn on a cob.
